Crab Louie is a West coast favorite, and the salad famously consists of fresh crab, a chili sauce mayonnaise dressing, tomatoes, and hard boiled eggs over a bed of crisp lettuce. Shrimp Louie is the same thing, only using shrimp instead of the crab.

Ingredients
  • 1 Dungeness crab cleaned, cooked, and meat pulled from crab
  • 1 cup real mayonnaise
  • 2 tablespoons chili sauce
  • 2 tablespoons chopped parsley
  • 1 tablespoon tomato ketchup
  • 1/2 teaspoon Worcestershire sauce
  • Lettuce enough for 4 salads
  • 2 to matoes cut into 8 wedges each
  • 4 hard boiled eggs cut into quarters
Instructions
  1. Mix the mayonnaise, chili sauce, parsley, ketchup, and Worcestershire sauce together.
  2. Divide lettuce over 4 salad plates. Divide the crab between the plates. Garnish with 4 tomato wedges and 4 hard boiled egg wedges. Either top the salad with a dollop of the dressing, or place in 4 small ramekins for each person as a salad accompaniment.
  3. Serve immediately.
