Catfish is placed in foil squares with mushrooms, green onions, lemon juice, and herbs, before being sealed up and placed over hot coals until the fish flakes.

Grilled Bayou Catfish in Foil
Ingredients
  • 6 catfish fillets
  • 1 cup dry white wine
  • 1/2 cup melted butter
  • 1/2 cup thinly sliced mushrooms
  • 1/4 cup chopped green onions
  • 2 tablespoons fresh squeezed lemon juice
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • Thyme leaves
Instructions
  1. Cut off 6 squares of heavy-duty aluminum foil, 18 inches in size.
  2. Lightly spray each square.
  3. Place a fish fillet on each square. Mix the rest of the ingredients together, and divide the sauce between each fillet, spooning it on top. Fold the foil to seal up firmly.
  4. Place each packet on a hot barbecue grill about 6 inches over hot coals. Cook for about 20 minutes until the fish flakes and is done.
  5. To serve, place each foil packet on a plate, and open up.
