How to Scale a Fish

    1. Place the fish on a large, flat, clean surface.
    2. Holding the fish by the tail, rub a fish scaler or the back of a heavy chef’s knife from tail to head until the scales are removed from one side. Use a smaller knife for smaller fish. If using a fish scaler, clean periodically as needed.
    3. Turn the fish over, and repeat for the other side.
    4. Rinse the fish off to remove any loose scales that still cling to body.
