Red Mayonnaise

Ingredients

  • 2 red peppers roasted, peeled, seeded, and diced
  • 1 garlic clove smashed or crushed with a garlic press
  • About a 1/2 cup real mayonnaise
  • 1 teaspoon fresh squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Place the chopped red peppers and garlic in the bowl of a food processor or blender and pulse until smooth.
  2. Mix the red pepper puree and the mayonnaise, and season to taste with lemon juice and salt and pepper.
  3. Serve.
