Deviled Crab
Ingredients
  • 1 lb. crabmeat picked to remove all shell
  • 2 tablespoons chopped onion
  • 3 tablespoons melted butter
  • 2 tablespoons flour
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • White pepper dash
  • 1/2 teaspoon dry mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried rubbed sage
  • 1 tablespoon fresh squeezed lemon juice
  • Tobasco sauce to taste
  • 1 egg beaten
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon melted butter
  • 1/4 cup dried bread crumbs
Instructions
  1. Cook the onion in the 3 tablespoons melted butter until softened. Whisk in the flour, and then gradually whisk in the milk. Cook until thickened, stirring constantly. Add in seasonings, adjusting as desired. Stir in the lemon juice and tobacco sauce.
  2. Add in a bit of the cooked sauce to the beaten egg, and whisk until blended. Transfer the warmed egg mixture back to the sauce. Cook for one minute. Remove from the heat.
  3. Stir in the crab and chopped parsley. Divide the crab mixture between oven safe serving dishes. Mix the 1 tablespoon melted butter and 1/4 cup dried bread crumbs, and divide this evenly between the dishes.
  4. Place on a sheet pan, and bake in a preheated 350 degree oven until browned, about 20 minutes.
