Finely chopped macadamia nuts are used as the coating for these pan fried mahi mahi (dorado) fish fillets.

Macadamia Nut Crusted Mahi Mahi with Mango Salsa
Ingredients
  • For the Macadamia Crusted Mahi Mahi
  • 6 mahi mahi fillets
  • 3/4 cup finely chopped macadamia nuts
  • 1/3 cup flour
  • Salt and pepper
  • Egg wash
  • Oil for frying
  • For the Mango Salsa
  • 2 ripe mangoes cubed
  • 1 small red bell pepper roasted, skinned and chopped
  • 1 small Hatch or Anaheim chile roasted, skinned and chopped
  • 1 cup fresh diced pineapple
  • 1/2 cup diced red onion
  • 1 large garlic clove minced
  • 1 small bunch cilantro cleaned and chopped
  • 2 tablespoons olive oil
  • 1/2 lime squeezed for juice
  • Salt and pepper to taste
Instructions
  1. Heat a thin layer of oil in the bottom of a heavy bottomed frying pan. Sprinkle each fillet with salt and pepper. Dip in egg wash and let excess drain off. Press the fillets into the nut mixture. Brown the fillets on one side, turn over, then brown the second side, cooking fillets through. Remove to a platter and serve with the mango salsa.
