Southern Fried Catfish
Yield 6-8 servings
Classic recipe for fried catfish adapted from The Southern Junior League Cookbook.
- 3 pounds catfish fillets
- Salt and pepper
- 2 cups yellow cornmeal
- Cooking oil for deep frying
- Rinse and pat dry the catfish fillets. Salt and pepper them, and cut into serving size pieces.
- Place the cornmeal in a large plastic zipper bag, and add in the catfish. Shake until the fish is coated.
- Fill a deep fat fryer with cooking oil to a depth of 3 inches. Preheat oil to 350 degrees F and fry until the fish is golden on all sides, turning once.
- Serve hot.
