Cajun Shrimp Jambalaya
Ingredients
  • 1 tablespoon butter
  • 1 tablespoon butter
  • 1/4 cup ham cubed
  • 1/4 cup diced green pepper
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1 sprig fresh parsley chopped
  • 1 onion sliced
  • 2 garlic cloves crushed
  • Salt and pepper to taste
  • 1 pound shrimp peeled
  • 2 cups chopped tomatoes
  • 1 1/4 cups tomato juice
  • 1 cup uncooked long grain rice
Instructions
  1. Melt butter in a large sauce pan over medium heat. Add in the flour, ham, and green pepper. Cook for 5 minutes, stirring constantly. Add in the remaining ingredients except the rice. Bring the mixture to a boil. Sprinkle in the rice. Cover, and simmer slowly for 40 minutes, until the rice is done and liquid is absorbed.
