If you are wanting to poach fish and are looking for an easier way to do it, try using a fish poacher. These pans are designed to poach fish and have a perforated bottom that can be lifted up to remove the fillet or whole fish easily from the poaching liquid. They are typically long enough to hold an average sized whole round fish, such as a trout, or several fillets or steaks in a row.

The pan pictured below (via Amazon affiliate) is for poaching a flat fish. It is called a ‘turbotiére’ or a turbot poaching pan. These pans are in the shape of a kite and meant to hold a smaller whole flat fish such as a turbot or halibut.
