Ingredients
3poundscatfish fillets
Salt and pepper
2cupsyellow cornmeal
Cooking oil for deep frying
Instructions
Rinse and pat dry the catfish fillets. Salt and pepper them, and cut into serving size pieces.
Place the cornmeal in a large plastic zipper bag, and add in the catfish. Shake until the fish is coated.
Fill a deep fat fryer with cooking oil to a depth of 3 inches. Preheat oil to 350 degrees F and fry until the fish is golden on all sides, turning once.
